Light Broth Fondue
A lighter alternative to fondue with oil. Great for a small dinner party wit h friends.
Ingredients
4 cups chicken broth OR 4 cups vegetable broth
1 teaspoon thyme
salt and black pepper
1 tablespoon fresh chopped parsley
squeeze of lemon, optional
splash of white wine, optional
1 1/2 lb chicken breast, cut into 1/2-inch slices
1 1/2 lb top sirloin, cut into 1/2-inch slices
1 head broccoli, cut into small florets
1 lb mushrooms, cleaned
1 lb small new potatoes, parboiled
Other fresh vegetables, turkey meatballs, shrimp, etc.
Directions
Bring the broth to a simmer over medium heat. Stir in the chopped garlic and thyme and continue to simmer for 10 minutes. Season to taste with salt and pepper. Remove from heat and stir in the chopped parsley. Pour broth into fondue pot and place over a flame that is set as high as possible. We like to serve this with a variety of condiments: flavored mayonnaise, green goddess dressing, barbecue sauce, melted butter (for vegetables)...whatever you like!
