Greek vegetables combined with goat cheese make a unique, delicious side dish.
4 medium peeled potatoes, very thinly sliced
fresh mint, chopped (several tablespoons to taste)
4 zucchini, sliced
salt and pepper
6 oz pkg goat cheese
1/3 c olive oil
large pinch of oregano
2 medium tomatoes, grated or finely chopped
Combine potatoes, zucchini, mint and diced tomatoes in a bowl. Add salt, pepper and a pinch of oregano. Mix olive oil in with hands. Add 1/2 c water to mixture and mix with hands. Put half of the mix in a baking pan. Layer half of the cheese over top. Add the rest of the potato mixture and layer the rest of the cheese. Pour any remaining liquid from bottom of bowl on top. Bake uncovered one hour at 375.
