Tortellini Soup
My sister Stephanie's signature.
1 lb. Italian Sausage
1 c. onions, diced
2 garlic cloves, minced
5 cups beef broth
1/2 c dry red wine
2 c. canned, diced tomatoes
1 c. thinly sliced carrots
1/2 tsp dried basil
1/2 tsp dried oregano
8 oz can tomato sauce
1 1/2 cups zucchini, sliced
8 oz cheese filled tortellini (refrigerated)
8 Tbs. fresh parsley, chopped
1 med green pepper, diced
freshly grated parmesan
Brown sausage and remove. Sauté onions and garlic in drippings until tender. Add next 7 ingredients (including tomato sauce) and sausage. Bring to a boil. Reduce heat, simmer uncovered 30 minutes. Stir in zucchini, tortellini, parsley, green pepper. Simmer covered 35-40 more minutes. Top with parmesan.
