Andes Mint Cookies
Chocolate cookies topped with melted Andes mints - perfect for the holidays.
c. butter
c. brown sugar
2 Tbsp. Water
2 eggs
1 tsp. baking soda
Andes mints (4 packages)
2 cups chocolate chips
2.5 cups flour
1/2 tsp salt
Combine cup margarine, c. brown sugar and 2 Tbsp. Water. Microwave until melted. Stir in 2 cups chocolate chips until melted. Cool for 10 min. Beat in 2 eggs, and add 2 cups flour, 1 tsp. baking soda and tsp. salt. Mix and chill for 1 hour. Roll into balls and bake at 325 degrees for 8-10 min. Remove from oven and place an Andes mint candy on top of each cookie. Let stand until melted, then spread as frosting over the cookie.
