Zucchini Bars
Wet Ingredients:
In one bowl, combine:
3 eggs
1 cup oil
2 cups shredded zucchini (can substitute pumpkin or banana)
2 cups sugar
1 tsp vanilla
Dry Ingredients:
Place a metal sifter over a second bowl and sift ingredients in this order:

1 cup flour
3 tsp cinnamon
2 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1 additional cup flour
Cream Cheese Frosting:
1 stick butter (room temp)
1 block cream cheese (room temp)
1 tsp vanilla
3 - 4 cups powdered sugar (or until it's the consistency you like)
Pour dry into wet and stir until clumps are gone, the mixture will be really wet.

Prepare a half sheet pan with butter and flour. Pour mixture in and shake until it covers the bottom of the pan. Bake at 350 for 25 minutes or until toothpick comes out clean. Makes 48 bars
Frosting instructions:
Wait until bars are cooled. Combine frosting ingredients in the bowl of a stand mixer and combine. Frost!
