Veggie Burgers
Serves 8
Ingredients
.5 cup brown rice, cooked to package directions
2 cans black beans, rinsed
1 bell pepper, cut into large dice and sauteed
half onion, cut into pieces
.5 cup sliced mushrooms
5 cloves garlic
.75 cup shredded mozzarella
2 eggs
1 T chili powder
1 T cumin
1 T garlic salt
a few dashes of hot sauce
almost a cup of bread crumbs
Directions
Place the cooked bell pepper, onion, mushrooms, and garlic in the bowl of a food processor, and chop finely. Place the brown rice and mozzarella cheese in the food processor, and process until combined. Add the drained black beans and pulse a few times until it comes together.

Whisk together the eggs, chili powder, cumin, garlic salt, and hot sauce. Dump the bean mixture into the food processor into the egg and spice bowl. Stir in the bread crumbs, adding additional bread crumbs as needed until the mixture is sticky and holds together. Divide into 8 large patties.

Heat olive oil in a large skillet. Cook for approximately 8 minutes on each side or until heated through. Can also be baked at 375 for 8 minutes per side.
