Aussie Chicken
Homemade honey mustard sauce adds a simple twist to chicken.
Serves 2
2 boneless, skinless chicken breasts
1 Teaspoon(s) seasoning salt
3 Slices bacon
1/2 Tablespoon oil
1/2 Cup sliced button mushroom
1/2 Cup shredded cheddar cheese
1 Pinch parsley
Honey Mustard Sauce
1/4 Cup prepared mustard
1/4 Cup honey
1/8 Cup light corn syrup
1/8 Cup mayonnaise
1/2 Tablespoon dried onion
Rub chicken breasts with seasoning salt. Cover and refrigerate while preparing the rest of the meal. Preheat oven to 350 degrees. Cook bacon in saute pan. Remove strips and cook the mushrooms in the bacon fat. Set aside. Combine mustard, honey, corn syrup, mayo, and onion flakes. Set aside. Heat oil in skillet. Brown chicken for three to five minutes on each side. Place in baking dish. Apply half of the sauce to the breasts. Sprinkle with cheese and bake for fifteen minutes. Garnish with parsley before serving.
