Marinara Sauce
A staple.
.25 cup olive oil
3 cloves garlic, minced
1/4 cup onion, diced
4 Cups crushed tomatoes
1 Tablespoon chopped fresh parsley
handful of chopped basil leaves
salt and black pepper
1 Pinch sugar
1 bay leaf
pinch of crushed red pepper, optional
Heat 2 T oil. Add garlic and stir over medium heat for thirty seconds. Add onions and saute for about ten minutes or until softened. Add the rest of the oil. Add tomatoes and herbs - simmer for thirty minutes. Add sugar to counter acidity and stir. Remove bay leaf and serve.
