1/2 Cup(s) lite coconut milk
1 Tablespoon(s) fresh lime juice
1 Pinch(s) ginger
1 Teaspoon(s) lite soy sauce
1 Teaspoon honey
1/2 Teaspoon corn starch
1/2 Teaspoon hot sauce
1 Clove minced garlic
1/4 Teaspoon salt
2 Teaspoon peanut oil
1 Pound large raw shrimp
2 Tablespoon chopped green or white onion
1/2 Teaspoon crushed red pepper
2 Cups cooked jasmine or long grain rice
Combine first nine ingredients - set aside. Heat peanut oil in large skillet over medium-high heat. Add shrimp and saute for 2 minutes. Add onion and crushed red pepper; cook one minute. Add coconut milk mixture to pan and bring to boil. Reduce and simmer one minute. Serve over rice. This dish is great with fresh green beans sauteed in butter and garlic.
