Spinach Quiche
One of my all-time favorite brunch recipes.
1 refrigerated pie crust
1 10 oz package frozen spinach, thawed and squeezed dry
1 1/2 Cups cream
4 egg
1/2 Cups chopped onion, sauteed in butter
2 cups shredded cheese of your choice (cheddar, swiss, etc)
1/8 Teaspoon nutmeg
salt and black pepper

Optional Ingredients:
1/2 Cup sliced, sauteed button mushrooms
6 Slices crumbled bacon
1/2 cup diced ham
Lay pie crust in 9 inch pie plate and press in with fork on edges. In a large mixing bowl, combine eggs and cream and beat together quickly with whisk. Add all other ingredients (but only use 2/3 of each of the cheeses). Stir. Pour this mixture into the pie crust and sprinkle with the remaining cheese. Bake at 400 degrees for 35 - 45 minutes, until lightly browned and set in the center
