These potatoes can be customized with anything you like: salsa, crab, cream cheese, whatever you like. Serving a half potato per person is often enough.
4 large baking potato
1/3 Cup milk
3/4 Cup shredded cheddar cheese
salt and black pepper
2 Tablespoon softened butter, plus extra for dotting
1/2 Cup sour cream
Bake the potatoes as normal. Cut a hole in each potato and scoop out the insides. Combine with all the other ingredients in a mixing bowl and beat for a few minutes with an electric beater. Put the mixture back into the skins and sprinkle with cheese. Dot with butter. Bake at 375 degrees for 25 minutes or until heated through.
