Wild Rice Chicken Supreme
One of my son's favorite meals.
6 Ounce package wild rice mix (such as Uncle Ben's)
1/4 Cup butter
1/3 Cup chopped onion
1/3 Cup flour
1 Teaspoon salt
1/2 Teaspoon black pepper
1 Cup half and half
1 Cup chicken broth
2 Cup cooked, cubed chicken breast
1/3 cup fresh parsley (optional)
Cook rice. Melt butter in large sauce pan. Add onion and cook over low until tender. Stir in flour, salt and pepper. Gradually stir in half and half and chicken broth. Cook, stirring constantly until thickened. Stir in chicken, parsley, and rice. Bake uncovered at 400 degrees for 30 minutes.
